time for sharing: Julia Child’s easy omelettes.

Eggs. I never get sick of them. I’ve been eating a lot of eggs during my pregnancy. Fried eggs (made by dad), poached eggs made with lots of vinegar and poached hard (mum makes the best), scrambled eggs (Jay wins this one) and omelettes (that would be moi).

Although I have had eggs that taste terrible to my pregnant taste buds–like Omega 3 enriched eggs. I won’t even tell you what I think they taste like. Most of the time, I find my organic, grain fed, free range eggs are just right.

I happened to catch an old episode of the French Chef one morning, and hunted it down on You Tube. Why? Because after trying this technique, it changed my egg loving life!

This is one of the best You Tube videos from Julia Child, in my humble opinion. Not only will you laugh, at her clumsy, whimsical ways, but you’ll learn something too!

Her omelettes are simple and delicious. I even made one for my mum, who is a very fine cook, and she said it was the best omelette she’d ever eaten! So pull out some fresh dill, lots of butter, a few eggs and get to work! This is one of my favorite lunches. And let’s be honest, how can one not be fascinated by Julia Child’s remarkable ways?

Add some crumbly goat cheese inside, with fresh dill and you will be swooning, trust me.
