I started reading “A Stolen Life” a memoir by Jaycee Lee Duggard. I don’t know why. After a few chapters, I slammed the book down and decided if this baby is a girl, she will never walk to school alone. In fact, if he is a boy, he won’t be walking anywhere until I say so! Probably not the best idea to get absorbed in a tragic tale of child abuse while pregnant. In fact, I don’t even know if it’s a story that needs to be told. We can all imagine what went on in that shack. The poor dear suffered horribly. It’s simple, sex offenders should be locked up for life. Or beheaded.

I don’t mean that.

Yes I do.

I stopped reading, feeling angry and disgusted, and decided it was time for muffins. Simple measuring of flour and sugar into glass bowls would take my mind off of it. I vow never to return to that book (I’m sure it gets better and full of hope, but come on). But I do promise a yummy recipe for vegan muffins.

Whenever I think of coconut, I think of the nasty brown coconut that tops cupcakes and cookies and funky things like that. Not my favourite thing, as you can tell. Even those Mounds bars (that Jay loves?) throw me off. Put together loads of sugar and coconut and you’ve lost me. However, I love coconut milk in anything, sweet or savory, and I don’t mind the unsweetened shredded coconut, as along as it’s doesn’t leave me chewing for days. Macaroons. Uh. Please no.

But alas, these past few days I’ve been thinking of coconut and muffins and how I really should bake some, since I eat 50 times a day, and am seriously draining the food “budget”.

These won’t last long, because as soon as I took them out of the oven, I forked one out of the hot tin, split it in two, and ate it. I think there is some sort of hormone that prevents my tongue from burning, because I can eat hot food like nobody’s business.

I’m 17 and a half weeks now, well on my way to 18 weeks. The nausea and vomiting bit had passed for the past week, but the past few nights it’s come back with vengeance. So that saddens me and my tummy. But today is a good day so far, so I decided to take advantage of a short work day and make something!

Vegan Coconut Muffins (I doubled the recipe…and made 11 medium sized muffins, because I get obsessive about my muffin portioning and it had to be fair, so i just left 12 out. Poor guy).

Note: These are great for morning sickness or queasiness, as they are mild in taste and easy to eat!

Makes 5-6 muffins.

Preheat oven to 350.

Combine:

  • 1 cup spelt flour
  • 1/2 cup white flour
  • 1/4–1/2 cup brown sugar
  • 1/2 cup shredded unsweetened coconut
  • 1 tsp baking soda
  • 1/2 tsp salt
Mix well. Add:
  • 1 cup coconut milk
  • 1/3 cup vegetable oil
  • 1 tsp vanilla
  • 1 tsp white vinegar (add this right at the end).
Once everything is mixed together, portion into a paper lined muffin tin. Top each muffin with a sprinkle of chocolate chips. Bake for 24-30 minutes.
Eat. Enjoy. Read a good book.

    I am with Jay on the coconut chocolate bars! The dark bounty bars are heaven. I could write you a very long list of coconut-laden treats I’ve had in the last month, from beer to ice cream. The Udder-Guys Toasted Coconut ice cream is one of my favourites. Anyways, enough about coconut. Those muffins look tasty, and your baby bump looks cozy under your apron. 🙂
